Fiesta Pasta Salad 1 c. cooked small macaroni shells, chilled 1/2 c. diced red OR green bell pepper 1/2 c. thinly sliced scallions OR diced red onion 1 Tbsp mayonnaise 1 Tbsp.minced fresh cilantro (Chinese parsley) OR Italian (flat-leaf) parsley 1-1/2 tsp seeded and minced jalapeno pepper 1/2 tsp salt 1/2 tsp. red wine vinegar 1/8 tsp chili powder *Garnish: cilantro or Italian parsley sprig In medium bowl combine all ingredients except garnish; cover with plastic wrap and refrigerate until chilled.
